KASHMIRI TEA

Just think about winters.. Extreme cold.. and a cup of hot and aromatic kashmiri tea with lots of dry fruits.. Mmmmm... :p So just try this recipe now.. And recieve alot of appreciations which will make your day!! :)




INGREDIENTS:

2 cups Water
1.5 tbsp Kashmiri Tea Leaves (or Green tea leaves)
2 pinches Soda Bicarbonate (Meetha Soda)
2 cups Chilled Water
8-10 Green Cardamom (roughly crushed)
Half Star Spice (gul.e.baadian)
1 Black Cardamom (crushed)
2 Cloves (longain)
Milk as required
2 tbsp Milk Powder
Chopped Almonds and Pistachios for garnishing.

METHOD:

1.In a pan, add 2 cups of water, kashmiri tea leaves and soda. Let it cook for 15-20 minutes on slow flame till it reduces to 1.5 cup.
2. Slow the flame and add 2 cups of chilled water gradually and throw this tea up and down with the help of deep spoon, till its colour turn to dark maroon. Cook it continuously.
3. After few minutes, add star spice, crushed black cardamom, crushed green cardamom and cloves and cook it for 5 minutes on medium flame.
4. Stain this tea in a seperate pan. Add powdered milk in fresh milk, and add this milk mixture in tea till the colour of the tea turns into light and beautiful pink. Cook this tea for few minutes and turn off the stove.

Sprinkle some almonds and pistachios on the tea cup and serve this aromatic and hot tea to your family and friends!! :)

NAAN KHATAI

Mmmm.. Wanna try some quick, yummy, tasty and mouth melting naan khatai? Here is the recipe for you.. Try it and love it! :)



INGREDIENTS:

2 cups Plain Flour
1 cup Caster Sugar
1 tsp Baking Powder
6 Green Cardamoms (powdered)
Ghee/ Oil as required
Onion Seeds (Kalonji) as required

METHOD:

1. In a bowl, add plain flour, baking powder, cardamom powder, caster sugar and mix it well.
2. Add some ghee or cooking oil and knead the mixture till it forms a dough.
3. Make small balls and press it with hands, put it in greased baking tray, sprinkle some onion seeds on the top of each naan khatai.
4. Bake it for 20 minutes, or till it leaves the tray.

NOTE: If you don't have caster sugar, take 1+1/4th cup of granulated sugar and grind it with the cardamoms, then add in plain flour.

Let it cool on room temperature and then serve.

GAJAR KA HALWA

Special gift for all sweet dish lovers.. Try this sweet, rich and DELICIOUS recipe and share with your friends too.. :)

INGREDIENTS:

2kg Carrots (grated)
2litre Fresh Milk
2 cups Sugar
1/2 cup Khoya or dried milk
1/2 cup Mix Dry Fruits
6-8 Green Cardamom
1/2 cup Ghee
Silver paper for garnishing
Barfi or Qalaqand for garnishing (optional)

METHOD:

1. In a large pan, add grated carrots and milk together. Cook it till milk gets dry completely and keep it aside.
2. In another pan, heat some ghee, add green cardamoms and let it fry for few seconds.
3. Add all the cooked carrots in ghee and mix it very well.
4. Add sugar in it and stir it continuously till the water of sugar becomes dry completely.
5. Add khoya and some dry fruits, mix it and serve hot.
6. Garnish it with silver paper, some dry fruits, khoya or some qalaqand.

NOTE: You can adjust the sugar as per your taste, and you can also increase the quantity of carrots and milk according to your family size.
Remember, the ratio of milk, carrots and sugar will remain same.(i.e: 5kg carrots, 5 litres milk, 5 cups sugar)

GULAB JAMUN

Want to eat yummy, soft and sweet gulab jamuns in very low price? Just try it now and make yummy gulab jamuns at your home!! :)

INGREDIENTS:
2 cups Milk Powder
1 Egg
1 tsp Oil
1 tbsp Plain flour
1/2 tbsp Semolina (Sooji)
2 tsp Baking Powder
Milk as required for making dough
Oil for deep frying

FOR SYRUP:
2 cups Sugar
2 cups Water
4-6 Green Cardamom (Elaichi)
few drops of Kewra water

METHOD:
1. First make the syrup by dissolving sugar in water.
2. Add cardamom seeds and let it boil, add some kewra water and turn off the flame.
3. In a bowl, add milk powder, egg, oil, plain flour, samolina, baking powder and kneed it with the help of milk till it forms a dough. (it should not be too hard or too soft)
4. Make small balls (about 30-32 balls) and deep fry it on slow flame till it becomes large and brown.
5. Take out from oil and keep it for 2 minutes, then add these balls into warm sugar syrup and soak in it for 10 - 15 minutes. Take it out and serve.

Serve hot and enjoy these soft and tasty home made gulab jamuns with your family.:)

QUICK ESPRESSO COFFEE

Start your day with a mug of creamy, hot and frothy Espresso coffee.. You just have to follow the steps very well, and you will get 100% results. :) 

INGREDIENTS:
1 tspn Instant Coffee (or as per your taste)
1 tbspn Sugar (or as per your taste)
1 tbspn Water
1 cup Hot Milk
Cream (optional)
Coco powder/ Coffee powder for garnishing (optional)

METHOD:
1. In a mug, add instant coffee, sugar and water.
2. Mix it very well with spoon, until it becomes pale and creamy. Or if you don't have much time, just blend this sugar, coffee and water mix with the help of blender. (This step is the soul of the whole recipe)
3. Pour it into a mug, and pour a cup of hot milk into it. Stir it slowly.
4. Put some cream into it and sprinkle some coffee or cocoa powder and serve hot immediatly.

TRADITIONAL SARSON KA SAAG

For all the Traditional and Desi food lovers.. Here is a winter's gift for you!! Try this and ENJOY!! :)


INGREDIENTS:
2 kg Mustard leaves (sarson ka saag)
1 kg Spinach leaves
5 tbsp Makai ka aata (corn meal)
6 Green chillies
8-10 Garlic cloves (finely chopped)
1 tsp Crushed red chillies
Salt to taste
1/2 cup Desi ghee
White butter as required

METHOD:
1. Clean and wash mustard leaves and spinach leaves thoroughly and cut it roughly.
2. In a large pan, add all the leaves (of mustard and spinach) and  green chillies.
3. Add 4-6 glasses of water and cover the pan. Let it cook on medium flame till the water reduce to 1 cup.
4. Blend all the leaves and chillies with its water, and keep it aside. (Do not add extra water for blending)
5.Take a pan, add Desi ghee or some butter, add chopped garlic and fry it for few seconds.
6. Add all the blended mixture, salt, Makai ka aata and crushed red chillies and fry it on high flame till all the water evaporates.
7. Serve hot with butter and makai ki roti.

EGG FRIED RICE

Do you want to make very quick,tempting and very delicious egg fried rice? Here is the recipe for you..!! :)


INGREDIENTS:
3 cups basmati rice
3 eggs
2 carrots chopped
2 capsicum chopped
2 spring onions chopped
3 cloves of garlic (finely chopped)
salt to taste
1 tsp chicken powder
1 tsp sugar
1 tsp black pepper powder
1/2 tsp white pepper powder
3 tbsp soya sauce
2 tbsp vinegar
1/4th cup oil

METHOD:
1. In a pan, take 6-8 cups of water, add 1 tsp salt, and 1 tbsp vinegar and let it boil.
2. When water starts to boil, add soaked rice and boil it completely. (do not let the rice extra soft)
3. Seperate the rice with water and keep it aside.
4. Take another pan, heat 1/4th cup oil, add garlic and stir it for few seconds.
5. Add beated eggs in it and stir immediatly for 2 minutes.
6. Add chopped carrots, capsicum, spring onions, salt, black pepper, white pepper, soya sauce, vinegar, chicken powder and sugar. Stir for few seconds. (Do not over cook the vegetables)
7. Add the boiled rice and stir it well, turn off the stove and serve hot.

CHICKEN IN ORANGE SAUCE

Did you ever tried chicken with any fruit? Here is the yummiest and sweet n sour recipe of chicken with ORANGES!! Do try it now and enjoy the sweet, sour and tangy flavour of oranges with the combination of chicken.. :)


INGREDIENTS:
1/2 kg boneless chicken cubes
1 tsp chopped garlic
salt to taste
1 tsp crushed black pepper
1 tsp crushed red chilli
2 tbsp soya sauce
2 tbsp tomato ketchup
1 tsp chicken powder
1 tsp sugar
4 cups orange juice
1/2 cup orange chunks
1/2 tsp orange zest (orange peel chopped)
2 tbsp cornflour
4-5 chopped green chillies
1 sliced onion
1/2 cup chopped spring onion
1/2 cup capsicum 

METHOD:
1. In a bowl, add chicken, salt, crushed black pepper, chopped garlic, chicken powder, soya sauce, tomato ketchup, crushed red chilli, and 2 cups of orange juice. Keep it aside for 1 hour.
2. Heat some oil in a pan, add sliced onions and sauté it, till it becomes softened, add chopped green chillies and mix it well.
3. Add the marinated chicken and fry it till the chicken becomes tender.
4. Add the other remaining 2 cups of orange juice and sugar and wait till the it starts to boil.
5. Add capsicum, spring onion, orange zest, orange chunks and mix it.
6. Adjust the salt and sugar as per your requirement.
8. Dissolve cornflour in some water and add gradually into the chicken and keep stirring.
9. When it becomes thick, turn off the flame and serve.

Serve it hot with fried rice or boiled rice and enjoy!!

ARABIC SHAWARMA

Are you looking for some different and unique taste? So, here is the arabic shawarma for you.. Try this out and ENJOYY!!! :)





INGREDIENTS:
4 Tortillas OR Pita bread
4 chicken breast fillet
1 tbsp crushed black pepper
1 tsp peprika powder
1tsp ginger garlic paste
salt to taste
1/4th cup vinegar
3 tbsp soya sauce
1 tsp mustard powder/paste
1/2 cup thinly sliced cabbage
1/2 cup thinly sliced carrot
1/2 cup thinly sliced capsicum
pickled cucumbers as required

FOR SAUCE:
4 tbsp yougurt
2 tbsp cream
2 tbsp tahini paste
2 tbsp lemon juice
1 clove of freshly mashed garlic
salt to taste.
( Mix all the ingredients of sauce together.)

METHOD:
1. Hammer the chicken breasts slightly.
2. Marignate the chicken breasts with vinegar, soya sauce, salt, crushed black pepper, peprika powder, mustard powder and ginger garlic paste and keep aside for an hour.
3. Grill the chicken nicely.
4. Cut the grilled chicken into strips and keep it aside.
5. Toast the tortillas or the pita bread, spread the sauce(mentioned above), add some vegetables, pickled cucumbets,put some pieces of chicken and roll it in butter paper.
6. Serve with french fries.

CHICKEN CORN SOUP

Hi friends!! In this lovely winters if you want to try some yummy and hot hot chicken corn soup, just try this recipe.. :)


INGREDIENTS:
1 cup boiled chicken (shreded OR small cubes)
4 cups of home made chicken stock
1 small can of creamy sweet corns
1 large egg
salt to taste
1tsp chicken powder (optional)
1/4th tsp black pepper powder
2 tbsp cornflour
soya sauce 
vinegar with green chillies
chilli sauce 

METHOD:
1. For chicken stock, take 6 cups of water in a pan and add few bones of chicken with 2 chicken breasts in dice cutting. let it boil till the water reduces to 4 cups.
2. Seperate the boiled chicken and the stock. Discard the bones.
3. In a bowl, add chicken stock, creamy corns, boiled chicken, chicken powder, salt and pepper and let it boil for 1 minute.
4. Dissolve cornflour in some water and add in the soup gradually and stir the soup continuously so that, no lumps can be formed.
5. When soup gets thick then add a beaten egg slowly in a soup and stir continuously.
6. Serve hot with green chillies dipped in vinegar, soya sauce and chilli sauce.
